Colombia Caturron “Wild” Anaerobic

For a Limited Time we are offering this unique hand-roasted showstopper from El Vergal or Black Mountain, an inactive volcano in the beautiful Departamente of Tolima in the mountain of Colombia. Caturron, a mutation of Caturra, is super rare and is kaleidoscopic in flavor – a true unicorn!

This showstopper comes via El Vergel’s partner-series, a curation system in which El Vergel (one of Colombia’s most famed estates) scours the country for its best producers and most unique lots. It’s a Caturron coffee, super rare and downright kaleidoscopic in flavor. Caturron is a mutation of Caturra. You can’t find it outside Colombia; even within the country, it’s pretty much a unicorn. As if that weren’t distinguising enough, it was processed via an anaerobic offshoot, aptly called, “Wild”. The Wild processing involves 150 hours (that’s right 150 hours!) of oxygen-suppressed fermentation. Following that? A speedy temperature-controlled drying phase. It’s bombastic, intense, iconoclastic – wild is the word.

Strawberry plays the overture here (you guessed it, the wild variety). It’s got sweetness, tang, sugar effervescence. It gives way to melon and pineapple. Blackberry rides the cool, making a showy appearance and lending to the fruit-forward style. But, there’s another flavor here that’s downright abstract… the wild note.
