For the freshest cup of Peerless Coffee, grind coffee just before brewing.
Whole bean (or ground coffee) should be stored in an air tight container.
Ideally coffee should not be stored for more than 2 weeks. If longer,
you can put the coffee in the freezer, but keep it in the air tight
container!
Yes, there are two types:
Water Extraction Process. (frequently referred to as Decaffeinated coffee)
Green beans are soaked in hot water to draw out the caffeine. After soaking,
the water is drained off and treated with methylene chloride, a solvent that
binds with the caffeine. The solvent and caffeine are removed by heating the
solution and the remaining water is returned to the beans and reabsorbed.
The green beans are then roasted at temperatures above 400 F and since methylene
chloride evaporates at 100 F, there is no trace remaining in the finished product.
The major advantage of this process is that the beans are immersed in water for a
relatively short period of time, so fewer essential flavor components are lost.
Re-absorption from the same water restores almost all original flavor components.
Swiss Water Process.
This method uses water and carbon filters to remove caffeine from the beans.
This chemical-free process has progressed through the years to maintain the
rich, gourmet coffee flavor that was previously achieved only through the
Water Extraction Process.
Green beans are soaked in water for a long period of time to dissolve
caffeine. The flavor components are also removed in the initial soaking.
The water is drawn off, then filtered through activated carbon or charcoal
to remove the caffeine, resulting in flavor-charged, but caffeine-free water.
The first batch of flavorless, decaffeinated beans are discarded and a new
batch of premium beans are soaked in the flavor-charged water. This water draws
off only the caffeine, while the bean's original flavor remains intact since
it is surrounded by flavor-saturated water.
The decaffeinated beans are dried and roasted in true gourmet fashion. Since
the first batch of soaked beans are discarded, this process is more costly
than the standard water extraction process. However this is a flavorful
choice for those who are at all concerned about the use of chemicals in
food and beverage processing.

Having native shade trees alongside of coffee trees can help the environment A
full canopy of trees help to slow the development of the coffee trees which
can increase the quality of the bean. The trees also provide soil nutrients,
substance for the indigenous animals (including migratory birds), and firewood
for the farming families. We strive to find coffees from farms that not only
believe in the sustainability of their ecosystem, but also treat their employees
fairly. The only way to do this effectively is to visit the farms that we buy
from and see for ourselves. As each year passes, we know more about our suppliers.
We do not buy "Shade Grown" or organic coffees that can not be confirmed by
certification or a visit. Fortunately, if one searches hard enough, quality
and these other issues go in hand in hand. Some examples of Peerless coffees
that mirror this belief are: Guatemala Antigua, Mexico Estate, and all Peerless
Organic. An important point to remember is that shade trees are not indigenous
or necessary in certain regions/countries which do produce some exquisite and
unique coffees (i.e. Kenya, Brazil).
To maintain the best freshness of the coffee, we recommend ordering coffee as
whole beans. Then, with a coffee grinder, you can grind the coffee just before
brewing it to make sure it's as fresh as possible.
If you do not have a grinder or do not know what type of grind you should get or
are buying coffee as a gift and do not know what type of coffee maker your friend
has, it's generally a safe guess to order coffee that's ground "drip." Most
coffee makers are automatic drip and this is the preferred grind for them.
If you are ordering coffee for use in an espresso machine, order "espresso" grind.
No! Once coffee has cooled, its chemistry has changed. Reheating the coffee will
further break down the few aromatics left, giving you bad-tasting coffee. Keep
coffee in a thermos to keep it warm or simply brew a fresh pot.
6 oz. cup of coffee = 100 milligrams of caffeine
1.5-2 oz. shot of espresso = 80-100 milligrams of caffeine
12 oz. cola drink = 38-45 milligrams of caffeine
A decaffeinated cup of coffee has 97 to 99 percent less caffeine than a caffeinated
cup. A 6 oz. cup of decaf has 1 to 5 milligrams of caffeine.
Peerless Coffees are certified Kosher by the Kosher Supervision of America (KSA).
This means that a rabbi has overseen our production facility and can vouch for the
purity of our coffees and teas, including the fact that our storage and production
facilities meet with stringent requirements of cleanliness.
For dark roasted coffee, the "oil" on the surface of the beans is a sign of
freshness. It's actually not oil, but starches in the beans that have been
released by the dark roast. Lighter roast coffees do not release any oil
on the surface of the beans.
It is almost impossible to say. There are many variables that contribute to
caffeine content from cup to cup, such as the type of bean, roasting and brewing
methods, and grind.

Tea must be stored correctly to maintain freshness. Excessive heat, permeating odors,
moisture or exposure can forever alter the character of your tea. Tea must be stored
in a dark, odor-free and moisture-free environment. An airtight container is necessary
to maintain quality. If you store tea in a tin canister, seal it in a zip-lock bag
first. Most tins are not airtight. We strongly suggest using an airtight ceramic
container with an odor-free silicone seal and a metal clamp.
Both green and black tea come from the Camellia sinensis plant. The difference is in the
amount of time that the picked leaves are allowed to oxidize. Green teas are minimally
oxidized, whereas Black teas are fully oxidized.
There is an increasing body of scientific evidence that points to the many health
benefits of Green tea - especially in its high contents of polyphenols - powerful
anti-oxidants.
Tea has a wide range of caffeine depending upon the type of tea, plant varietal, and
brewing style. Generally, green teas contain 5-20 milligrams, Oolong teas contain 35-45
milligrams, and Black teas have 45-60 milligrams of caffeine in an 8 oz. cup. By
comparison, a typical cup of coffee has roughly 125-185 milligrams of caffeine.
Orange pekoe tea ("OP") is not flavored with orange. It refers to the grade of tea,
consisting of large pieces of leaves or even whole leaves. Orange pekoe is a high-quality
grade of tea.
Herbal tea is not actually tea, but rather an herb or a mix of herbs. Only in the
United States are these herbal mixtures called tea. They are usually referred to as
an infusion or tisane in other parts of the world.
Most are decaffeinated. However, Yerba Maté supposedly does not contain caffeine,
but rather a closely related compound called "mateine" which is a similar stimulant.
Mateine is not as harsh to your body and does not produce the same addictive results.
